This is a great beginner Ginger Beer recipe. It will yield 8x 500ml bottles and is best suited to using a beginner wine kit. The alcohol content will be around 5-6%.
Ingredients
• 200 g fresh ginger (big supermarket piece)
• 600g of sugar
• Juice of 2 lemons (or bottled lemon juice)
• 1 packet of wine demijohn yeast
• 4 L water
Equipment
• Pot
• 5 L demijohn (with bung and bubble)
• Funnel (optional)
• Bottles for Carbonation (Capper if required)
• Syphon
This recipe is best suited to using the beginner wine kit.
Step-by-step
1) Make ginger syrup
1. Grate or finely chop the ginger (no need to peel).
2. Put in pot with:
• 1 L water
• All the sugar
3. Boil 10–15 minutes.
4. Let cool until warm (not hot).
2) Build the ferment
1. Pour syrup into your big container.
2. Add:
• Lemon juice
• Remaining 3 L water
3. When lukewarm (below bath temp), add yeast.
4. Shake/stir well.
3) Ferment to for 1 week. (Don’t use time alone, a hydrometer is the only way to tell for certain)
4) Bottle for fizz
1. Syphon into bottles
2. Add 1teaspoon of sugar per 500ml bottle
3. Cap or close bottles
Leave for a week to carbonate
Then put in fridge to stop fermentation.
