Pickled Red Onion

These quick pickled red onions are sharp, slightly sweet, and ready in no time. Made with simple ingredients and grated using a cheese grater for extra-fast pickling, they’re perfect for burgers, tacos, sandwiches, and cheese boards. One easy brine, one 900 ml jar (or a beginner pickling kit) and you’re set.

Ingredients (Per 900ml Jar)

Optional

  • 2 garlic cloves, peeled
  • 1 teaspoon mixed peppercorns

Instructions

  • Using the wide slot of a box cheese grater, grate the red onions into thin slices.
  • Pack the grated onions into one 900 ml jar.
  • Add the garlic cloves and peppercorns, if using.
  • In a medium saucepan, heat the vinegar, water, sugar, and salt over medium heat. Stir until the sugar and salt fully dissolve (about 1 minute).
  • Remove from heat and let the brine cool slightly, then pour it over the onions, making sure they’re fully submerged.
  • Set aside to cool to room temperature, then seal and store in the fridge.

Pickling Time & Storage

  • Ready once bright pink and tender
  • ~1 hour for finely grated onions
  • Overnight for softer texture
  • Keeps in the fridge for up to 2 weeks
